In this episode from the “Plantation Celebrations” series of “A Taste of Louisiana” from June 4, 1994, Chef John Folse visits Kent House Plantation in Alexandria. During his visit, he talks to Robert “Bobby” DeBlieux, an authority on Creole culture, Creole plantations and Creole bereavement traditions. In the kitchen, he cooks Smothered Pork Sausage with Honeyed Apples and Creamed Radishes. He also prepares Honeyed Apple Rings and discuses open hearth cooking with Marion Donaldson, a hearthside cook at Kent House Plantation.
