In this episode from the “Bed and Breakfasts of the Bayou State” series of “A Taste of Louisiana” from December 12, 1998, Chef John Folse visits the Atchafalaya Basin and Bois Des Chenes Bed and Breakfast in Lafayette, Louisiana. In the studio kitchen, Chef Folse prepares Redfish Sauce Piquant and Blackberry Crepes. He then travels to the bird rookery at Lake Martin with owner Coerte Voorhies. Back at Bois de Chenes, Chef Folse and owner Marjorie Voorhies cook Oyster and Artichoke Patties.
