This episode of the series “En Francais” from May 8, 1983, features a visit to Chez Marcelle in Broussard, Louisiana, the former site of Billeaud Plantation. It includes: an interview with Marcelle Bienvenu, the owner of the restaurant; an interview with Rose Aimee Billeaud Bechet, a former resident of the plantation; and Chef Joseph Gonsoulin and Sous Chef Bryan Richard demonstrating how to make a few of the restaurant’s specialties. James Fontenot then interviews Mathe Allain and Carol Doucet. They discuss the French literature created in Louisiana. This episode was preserved through a 2018 CLIR Recordings at Risk Grant.
