Description
In this educational program from 1992, Chef John Folse prepares gumbo for lunch with his friends. He explains the influence of several nationalities on Louisiana cuisine, including the French, Spanish, Germans, British, Italians, Native Americans, and Africans. He also discusses some of the traditional dishes in Louisiana cuisine, including gumbo, jambalaya, red beans and rice, maque choux, and pralines. This program also includes footage of crawfishing and the making of cane syrup at the Grant Syrup Mill.
