In this episode from the “Southwestern Cuisine” series of “Savor the Regions” from June 29, 1996, Chef D.C. Flynt prepares Avocado, Black Bean, and Red Onion Fajitas with a Green Tomatillo Salsa, as well as Grilled Halibut with Green Apple and Red Chili Salsa. Next, Chef Flynt visits the Skyline Emu Ranch outside of Tucson, Arizona, and learns more about emu ranching from owners Rose Augst and Lee Augst. He also visits the Loews Ventana Canyon Resort in Tucson, where Chef Rich Koby shows him how to prepare Grilled Arizona Emu with a Wild Mushroom Risotto and Wild Huckleberry Sauce. Back in the kitchen, Chef Kelly Patrick makes Sizzling Lime Marinated Emu with Pumpkin Seeds. Lastly, Chef Flynt and Chef Patrick interview Dr. Donna Ryan of the Pennington Biomedical Research Center in Baton Rouge, Louisiana. She discusses women’s health issues.
