Flynt prepares Poached Salmon with Potato Pancakes, Leeks, and Leeks Sauce, as well as Catfish Enchiladas with Red Chili Sauce. Next, he visits the Loews Ventana Canyon Resort in Tucson, Arizona, where he looks on as Cynthia Coston constructs an Old Pueblo Christmas Gingerbread Village. Executive Chef Jim Makinson then shows Chef Flynt how to make Blue Corn Pancakes with Prickly Pear Syrup. Back in the kitchen, Chef Kelly Patrick makes Spring Trout with Lime Vinaigrette over Jicama Slaw, as well as Pesce Piquante.
