Description
In this episode from the “New Orleans Cuisine” series of “Savor the Regions” from September 27, 1997, Nutritional Chef Kelly Patrick prepares dishes centered around desserts and cakes. Chef Patrick puts a health twist on popular Louisiana Dishes. She first prepares Apple Bread Pudding with a Raspberry Hard Sauce. Then, she visits with local strawberry farmer, Jackie Kipper. After that, Chef Patrick meets with Executive Chef Nicholas Rabalais at the famous Fairmont Hotel in New Orleans, Louisiana. He prepares Lemon Pepper Marinated Strawberries. Finally, Chef Patrick heads back to the kitchen to bake Strawberry Napoleons, Sweet Cheese Crepes topped with Ponchatoula Strawberries, and a Cafe Au Lait Genoise. These desserts highlight the best of Louisiana’s local produce using farm-fresh strawberries. This program was preserved through a 2022-2023 Public Broadcasting Preservation Fellowship.
