In this episode from the “New Orleans Cuisine” series of “Savor the Regions” from October 18, 1997, Nutritional Chef Kelly Patrick prepares vegetarian dishes with Louisiana influences. Chef Patrick puts a health twist on popular Louisiana Dishes. She first prepares Herbed Rice Cakes. Next, Chef Patrick visits the French Market in New Orleans, an open-air farmers market that sells the best of local Louisiana produce. There she speaks with nutritionist Baldwin Sanders about the benefits of eating locally grown fruits and vegetables. Next, Chef Patrick heads back to the kitchen to cook Roasted Eggplant and Tomatoes and a Soulful Vegetable Medley. Finally, Chef Patrick speaks with, guest, Dr. Marlene Windhauser. They discuss the results of the DASH program, a national study on diet and hypertension. This program was preserved through a 2022-2023 Public Broadcasting Preservation Fellowship.
