Description
In this episode from the “New Orleans Cuisine” series of “Savor the Regions” from November 1, 1997, Nutritional Chef Kelly Patrick prepares soups and salads with influences from New Orleans cuisine. Chef Patrick puts a health twist on popular Louisiana Dishes. She first prepares Gumbo and a colorful Mardi Gras Salad. Next, she travels to New Orleans to prepare a dish with Chef Susan Spicer, owner of Bayona restaurant. Chef Spicer prepares Bayona Seared Tuna. Finally, Chef Patrick heads back to the kitchen to cook Seafood Dumplings with Remoulade Sauce. This program was preserved through a 2022-2023 Public Broadcasting Preservation Fellowship.
