Description

In this episode from the “New Orleans Cuisine” series of “Savor the Regions” from November 15, 1997, Nutritional Chef Kelly Patrick prepares dishes centered around fresh caught seafood. Chef Patrick puts a health twist on popular Louisiana Dishes. She first prepares Pompano au Papier with a Citrus Beurre Blanc. Next, she visits Louisiana Seafood Exchange and speaks with Robby Walker, director of marketing and sales. Finally, Chef Patrick heads back to the kitchen to cook Pan Seared Tilapia with Sazerac Sauce, and Fresh Drum Fish with Johnny Cakes and Creole Red Bell Sauce. This program was preserved through a 2022-2023 Public Broadcasting Preservation Fellowship.
